Mount Gay is the product of 310 years of knowledge, experience and refinement. Mount Gay XO, or Extra Old, reflects this refinement and shows the increased maturation period of the rum. Where Eclipse is floral and fruity, XO is rich and opulent. Using significantly older barrels, between 8 and 15 years, of mainly double pot distillates, Mount Gay XO has been blended to be enjoyed neat or on the rocks.

Appearance: Deep copper.
Nose: Rich vanillas and notes raisin croissants.
Taste: Smooth créme caramel, with hints of oak.
Finish: Baking spice and cocoa with the tannins from the wood becoming more prominent.
Overall: Quintessential ‘sipping rum’.

Rum is a spirit made exclusively by fermenting sugarcane or its bi-products, these being molasses and sugarcane juice. There are no real rules when it comes to rum production making it a very large and varied category. The process of making this spirit is a combination of fermentation and distillation.

Mount Gay Distilleries.

Mount Gay Distilleries takes the finest resources Barbados has to offer when producing their rum. Starting with sugarcane molasses, Barbadian sugar is amongst the finest in the world and so yields exception molasses. This is then combined with water which is drawn up through coral limestone from deep beneath the island, thus acting as a natural filter. The water is then filtered three more times before being added to the molasses and a proprietary yeast strain for fermentation, which occurs in open air vats with the aid of natural yeasts. Mount Gay Rums are double distilled in traditional copper pot stills before being matured in charred white American oak barrels previously used to hold American Whiskey. Finally, Master Blender Allen Smith painstakingly blends the rum to create the desired expression of Mount Gay Rum. An individual batch of Mount Gay Rum contains dozens of different distillates.

With over 300 years of experience producing rum, Mount Gay Rums are the result of many generations of master distillers and master blenders evolving their methods and techniques to produce the finest rums from natural Barbadian ingredients. Mount Gay is the oldest existing rum brand in the world, dating back to 1703 when Sir John Gay took over management of a Barbadian distillery and began producing the rum that we know today.
