Mastering not only the science of distillation as others have done before, but also the age-old art of blending, theyseparate the botanicals in their gin into six different categories: Base, Citrus, Tea, Herbal, Spice and Floral and distil each category individually. Then theyblend them in perfect balance and create the distinct KI NO BI flavour.

TASTING NOTES
Appearance: Clear
Tasting Notes: Floral and aromatic with refreshing yuzu standing out. Subtly earthy, oak-y elements develop, joined by a kick of ginger.

KI NO BI- a gin that speaks of its place of birth. As clear as the air in the sacred mountains of Kyoto. A fresh aroma of yuzu, and a thread of sansho that lingers like a morning mist in a bamboo forest. The juniper complements and showcases the Japanese botanicals. Ginger root gives a slightly warming, spicy finish.

INGREDIENTS
Made using a rice spirit base, as well as a selection of botanicals including locally-sourced ingredients – the likes of yuzu, hinoki wood chips, bamboo leaves, green sansho and gyokuro tea. The botanicals are split into six flavour groups (Base, Citrus, Tea, Spice, Fruity & Floral and Herbal), and each group is distilled individually before being blended together.
