Chairman’s Reserve Spiced starts with selected aged rums of both Coffey column stills and copper pot stills, married together after five years of maturation. Following maturation, the rum is steeped with ‘Bois Bandé’, a local Caribbean bark culturally known for its aphrodisiac qualities. Also added, are local spices and fruits such as cinnamon, clove, nutmeg, vanilla, allspice, lemon and orange peels.

Appearance: Deep amber.
Nose: Bitter orange, nutmeg and cinnamon.
Taste: Plenty of spices with zesty orange undertones.
Finish: Clove and tobacco linger.
Overall: A spiced rum packed full of Christmas cake character.

Rum is a spirit made exclusively by fermenting sugarcane or its by-products, these being molasses and sugarcane juice. There are no real rules when it comes to rum production making it a very large and varied category. The process of making this spirit is a combination of fermentation and distillation.

Saint Lucia Distillers.

The Barnard family first settled in Saint Lucia in the 1820Ős and established their distillery in the 1930s by making rum from molasses produced by the islands’ massive sugar plantations. Due to the rise of European sugar beet, the local sugar industry was forced into extinction. This led to negative effects on the island’s growing rum trade. With few choices remaining, the last two distilleries formed a joint venture and consolidated their operations to the picturesque Roseau Valley, creating what is known today as St. Lucia Distillers. With the history behind them, Laurie Barnard took it upon himself to restore St. Lucia’s rum providence and created Chairman’s Reserve, which has re-established the prestige of St. Lucia’s rum culture.
