50ml 100% Agave Tequila

50ml Pineapple Juice 

20ml Sugar Syrup 

1/4 Lime

A spoonful of Pineapple Chunks

1-2 Slices of Fresh Chilli

Pineapple Leaf garnish

This built drink sees the long-awaited return of tequila to our masterclass menu. This traditionally underrated spirit is seeing a slow but steady incline in popularity as drinkers’ knowledge and adventurousness grows over time. Sadly though, tequila is still seen by many as something to simply do shots of with salt & lemon.

Ingredients

50ml 100% Agave Tequila

50ml Pineapple Juice 

20ml Sugar Syrup 

1/4 Lime

A spoonful of Pineapple Chunks

1-2 Slices of Fresh Chilli

Pineapple Leaf garnish

Method

In a julep tin, add the pineapple chunks, chilli slices and lime quarter.

Muddle thoroughly using a muddler.

Using a jigger to measure add the tequila, pineapple juice and sugar syrup 

Fill cup 2/3 with crushed ice 

Use a bar spoon to churn the cocktail (scooping ingredients from the bottom and stirring simultaneously) 

Top with a dome of crushed ice 

Garnish with a straw, lime wheel and napkin jacket around the tin. 

Serve and enjoy.
