Genius Month: Yellowstone Bourbon Tasting

Our Cellar Bar has produced a brand new cocktail list for 2020, all centring around the theme of genius, so in aid of this we’re holding a series of tastings shining a spotlight on some of the most ingenious and innovative distillers and producers in the industry.
The second in our series will be the Limestone Branch Distillery, which was founded by members of the Beam family. Now distilling in very small batches – a single cask is filled every day – Paul and Steve Beam have faithfully restored the fabled Yellowstone Bourbon brand.
During the planning stages, the family even resurrected yeast from an old Donna Jug they stumbled across, belonging to Minor Case Beam, so that they could distill with the same yeast their ancestors did.
A spark of inspiration which married chemistry and history together and left us all with some beautiful bourbon, salvaged from posterity, to enjoy for years to come. If that isn’t genius, we’re not entirely sure what is.
