BAM BOO BRUNCH

By TATTON & THOMPSON

Last Sunday we tucked in to a one-off boozy BAM BOO Brunch here at our multi-faceted Shoreditch establishment as we joined forces with the Bao bun powerhouse.

Their unique concept and love for buns took BAM BOO from market stall to Soho popup in just 3 months, and we were just as thrilled as they were to take on this new challenge – collaborating to create an exclusive food & drinks menu for their first ever brunch service.

A relaxed afternoon, featuring classic Asian flavours and fluffy steamed buns – not to mention our own punchy cocktail pairings, – was had by all who attended.

Guests started arriving from 1pm, where they were greeted with one of our bespoke welcome cocktails at the Lounge Bar.

Our attentive hosts then took them upstairs to our communal dining space in the West Wing, where attendees were met with a three-course banquet of Asian-inspired dishes; ranging from Japanese Matcha tea-infused crepes, to rye bread topped with an intense combination of Wasabi and Goat’s cheese creme fraiche.

Having given our expert bartenders their exclusive menu in advance, we worked closely with the chefs to curate three bespoke cocktail pairings designed to enhance the varied flavour combinations of each course.
